~Curry Cajun Pasta~

Ingredients for the Curry Cajun sauce

  • 1 can of tomato paste or 1 big can of Hunts Pasta sauce or (Pasta sauce of your choice)
  • 2 tbsp Cajun seasoning or (Make your own: 2 tbsp: Italian seasoning, Paprika, salt, black pepper, cayenne pepper, dried thyme) 
  • 1.5 tbsp ginger paste 
  • 1 tbsp curry powder 
  • 1 tbsp kitchen king masala 
  • 2 tbsp Hot sauce
  • 2 tbsp sugar 
  • salt to taste 
  • Black pepper and red pepper flakes 
  • Few Fresh chopped: Basil, Oregano, Parsley leaves (optional) 
  • 3/4 cup of Heavy cream 
  • 2 cups of cooked Pasta of your choice 

Toppings: 

  • Colored peppers, Jalapeños, and other veggies of your choice sautéd in Italian seasoning and fresh herbs 

Method: 

  1. In a non-stick pan, add 4 tbsp Olive Oil, add ginger, red pepper flakes and sauté on medium till the ginger becomes aromatic. 
  2. Add canned tomato paste (+ 2 cups of water) or Any pasta sauce of your choice, all the seasonings, sugar, salt, and black pepper listed above.
  3. Cover the sauce and let it simmer for ~15 mins.
  4. Add those fresh herbs and let it simmer for a few more minutes. (optional)
  5. Once the sauce thickens, add the heavy cream and simmer again for a few minutes. 
  6. Mix the sauce with the pasta, top with veggies, shredded parmesan or shredded mozzarella and enjoy!
