Ingredients for the Curry Cajun sauce:
- 1 can of tomato paste or 1 big can of Hunts Pasta sauce or (Pasta sauce of your choice)
- 2 tbsp Cajun seasoning or (Make your own: 2 tbsp: Italian seasoning, Paprika, salt, black pepper, cayenne pepper, dried thyme)
- 1.5 tbsp ginger paste
- 1 tbsp curry powder
- 1 tbsp kitchen king masala
- 2 tbsp Hot sauce
- 2 tbsp sugar
- salt to taste
- Black pepper and red pepper flakes
- Few Fresh chopped: Basil, Oregano, Parsley leaves (optional)
- 3/4 cup of Heavy cream
- 2 cups of cooked Pasta of your choice
Toppings:
- Colored peppers, Jalapeños, and other veggies of your choice sautéd in Italian seasoning and fresh herbs
Method:
- In a non-stick pan, add 4 tbsp Olive Oil, add ginger, red pepper flakes and sauté on medium till the ginger becomes aromatic.
- Add canned tomato paste (+ 2 cups of water) or Any pasta sauce of your choice, all the seasonings, sugar, salt, and black pepper listed above.
- Cover the sauce and let it simmer for ~15 mins.
- Add those fresh herbs and let it simmer for a few more minutes. (optional)
- Once the sauce thickens, add the heavy cream and simmer again for a few minutes.
- Mix the sauce with the pasta, top with veggies, shredded parmesan or shredded mozzarella and enjoy!
