~Naked Tiramisu Cake~

1  Pack of White Cake Mix/ Vanilla Cake mix 

2 tbsp Coffee of your choice —> Brewed (You should have ~3/4 cup of black coffee) (optional add 1 tbsp of Chocolate powder) 

2.5 tbsp Coffee Powder 

1 can evaporated milk 

1/4 cup oil 

1 tbsp Vanilla 

3/4 cup Powdered Sugar 

Shredded White chocolate pieces (Use a white chocolate bark and chop it up in tiny pieces, flakes) 

Cocoa Powder for garnishing 

Cake Pans+ Liners

Below ingredients need to be COLD: 

1.5 cups Heavy whipping cream 

3/4 box of Mascarpone cheese (or 1/2 cup cream cheese+ 1 tbsp sour cream) 

Method: 

1. Mix the Cake mix+ Evaporated Milk+ Oil well into a cake batter consistency.

2.Divide the batter up in 3 separate cake pans. Pour a little bit of batter (1.5  ladles) 1 pan with plain vanilla cake mix.

3.Take the remaining cake mix, add 3 tbsp of Powdered coffee and mix well; divide the batter up in 2 other cake pans. 

4.Bake on 350 for 20-25 minutes, until its done well. 

Pro tip: line the cake pans with cookie liners and sprinkle with flour so it is easier for the cakes to come out of the pans. 

-Cool the cake on a cooling rack once they are out of the oven.

Make the icing: 

-Mix the Heavy whipping cream+ powdered sugar and whip it with a stand mixer/hand mixer until it starts getting a little stiff. 

-Add the Mascarpone cheese and vanilla and beat the mixture till stiff peaks form. (It should take about 1-2 minutes total) 

-Refrigerate the mixture until further use. 

Assembly: 

  • Line the cakes in order of Coffee-Vanilla-Coffee. On the 2 coffee sponges you will spoon 1/4 cup of the brewed black coffee mixture. You will see the sponge will absorb the coffee right away. 
  • Cover with the Mascarpone icing and sprinkle the white chocolate shards in the middle, then place the vanilla cake on top and repeat with the icing and white chocolate. 
  • Place the last layer of the coffee cake (infuse with 1/4 cup of brewed black coffee) and line with mascarpone icing again and then take a piping bag, fill it up with the remaining icing and decorate with dollops of icing on top of the cake. Sprinkle the cocoa powder on top using a small sieve. 
  • Refrigerate before you eat!
